BASIC FUNCTION (the primary purpose of this position):

Prepares food according to standardized recipes and approved methods either on the Roxy's hot line or in the Roxy's pantry.

PRINCIPAL ACTIVITIES & RESPONSIBILITIES:
  • Promote a clean, safe, healthy and friendly work environment for employees and guests; report any direct safety issues to Direct supervisor.
  • Resolve employee conflict in absence of the Sous Chef and assure team compliance with gaming and management practices.
  • Conducts and monitors job specific training in accordance with the New Hire Training Program.
  • Maintains par stock of food items in designated cooking areas.
  • Stores all products in accordance to Oregon Food safety regulations.
  • Executes specials designed by the Sous Chef.
  • Cook's items to order using grills, fryers, ovens, steam tables and any other specialized cooking equipment deemed necessary for food production.
  • Prepares and monitors accurate and detailed daily prep list.
  • In the absence of the Sous Chef, prepares accurate and detailed Kitchen Purchase Orders for chemicals, food, NA beverages, equipment and cleaning supplies
  • Responsible for sanitary transportation of food to the approved storage area. Items are to be removed from all packaging if possible and stored on the shelves in ready to use order after proper rotation (FIFO).
  • Cleans and monitors all areas of the Roxy's kitchen, but is directly responsible for keeping the work area clean during and after the shift.
  • Will act as steward/technician when necessary.
  • Ensures all food products are properly labeled with correct name and date of stored items.
  • Preforms temperature and waste logs as assigned.
  • Assists team members with recipe conversions.
  • Has a good understanding and knowledge to properly use and maintain all equipment in station.
  • Other duties as assigned.
POSITION REQUIREMENTS (objective educational or technical training required; skills; and years of experience):
  • Minimum three years exposure to commercial kitchen environment
  • Must be 18 years of age, with GED or HS Diploma.
  • Must have valid Oregon Food Handlers permit or the ability to obtain one, and a working knowledge of the regulations.
  • Demonstrated ability to work with minimal supervision.
  • Must be able to follow written instructions.
  • Must have the ability to provide instructions to others verbally and in written form.
  • Must pass and remain in compliance with Coquille Gaming Commission background check and drug free work place policies

PHYSICAL DEMANDS/WORK ENVIRONMENT (the physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this position. Reasonable accommodations will be considered to enable individuals with disabilities to perform the essential job functions):

Ability to work weekends, holidays and evening hours as business demands. While performing duties of this position, employee is required to stand for extended periods, and frequently walk, and use hands to; finger, handle, or feel objects, tools, or controls. Ability to lift up to 50 lbs. frequently. Ability to occasionally lift up to 80 lbs. Ability to manage stress appropriately, make decisions under pressure, manage anger, fear, hostility and violence of others appropriately. The casino work environment may expose you to second hand smoke on a regular basis.
